CIEH Level Two Award in Food Safety in Catering

Training providers have identified a growing need to make learning more relevant to specific business environments to increase effectiveness. These new qualifications are required to address new National Occupational Standards reflecting sector-specific needs.

The CIEH Level 2 Awards in Food Safety have been designed to address the food safety needs of the catering, manufacturing and retail sectors, in line with this demand.

Outline programme - the qualifications cover the following topics:

  • Legislation
  • Food safety hazards
  • Temperature control
  • Refrigeration, chilling and cold holding
  • Cooking, hot holding and reheating
  • Food handling
  • Principles of safe food storage
  • Cleaning
  • Food premises and equipment
  • Qualification information

Designed for anyone working in a catering, manufacturing or retail setting where food is prepared, cooked and handled.

  • Course duration: 6 hours
  • Assessment method: Multiple choice examination
  • QCA Accredited: Yes - Level 2

CIEH Level Two in Healthier Food and Special Diets - Consumers have become increasingly aware of the effects of a poor diet and the links between diet and health.

Overview: The CIEH has launched the CIEH Level 2 Award in Healthier Food and Special Diets, an accredited nutrition qualification in light of increased public interest in this area. Consumers have become increasingly aware of the effects of a poor diet and businesses are keen to understand the links between diet and health to meet changing customer demands.

Outline Programme - the qualification covers the following topics:

  • The relationship between nutrition, diet and health
  • The nutritional requirements of different population groups
  • Current policy, legislation and voluntary guidelines
  • The effects of food processing on nutrient content
  • Nutrition labelling
  • Qualification information

Designed for: All employees working in a food  business

  • Course duration: 6 hours
  • Assessment method: Multiple choice examination
  • QCA Accredited: Yes - Level 2
